Geoff's Bean Salad
Introduction
I was thinking about how I hadn't had one of my favourite salad's in many years one night when planning a dinner on the weekend. I took the next day off from work and lo and behold I happened to switch the telly on during a cooking show in which they were making the sort of bean salad I was thinking of. I've made a couple of changes but I'll still call it Geoff's Bean Salad.
Ingredients
- 1 Can Borlotti Beans
- 1 Can 3 Bean Mix (Lima, Kidney, Pinto, Great Northern etc.)
- 1/2 Cup Fresh Coriander Chopped
- 1/3 Cup Fresh Parsley Chopped
- 1/8 Cup Fresh Marjoram Chopped
- 1 Red Capsicum Diced
- 2 Spring Onions Chopped Finely
- 1 Spanish/Red Onion Diced
- 2 Tablespoons Golden Syrup
- 2 Tablespoons Mustard
- 4 Tablespoons Apple Cider Vinegar
- 2 Tablespoons Flaxseed/Linseed Oil (Optional)
- 1 Tablespoon Lemon Juice
- Salt and Pepper to taste
Instructions
- Put lemon juice on Spanish Onion. This will make it go lovely and pink, and give it an interesting flavour
- Put herbs, beans, onion and capsicum in large bowl.
- Stir golden syrup, mustard, apple cider, oil and salt and pepper together well in small bowl.
- Pour dressing over other ingredients, mixing well.
- Best if covered with tea towel in fridge or cool spot for a little while to soften the herbs.
Notes
You can also cook your own beans if you wish, which is what Geoff did in the show. He cooked 1/2 a cup of Borlotti beans, 1/2 cup of kidney beans, 1/2 cup Pinto beans and 1/2 cup of Lima beans in a big pot together until just soft.
